Okay, so back to the point... I am constantly in the kitchen at the country club I work at and LOVE to learn their secret recipes to their authentic latin food. One of my favorites is the hot sauce they always serve on the buffet that is made by one of the chefs who is from Mexico. It is 1,000x better than anything store bought, plus it's HEALTHY for you. Not like the ones you find in the stores pumped with sugar.
The trick to getting it so hot and flavorful is roasting the tomatoes and jalapeño peppers. How do you do that? Cut the tomatoes and chili peppers in half and put them in the oven at 350 degrees for a good 25 minutes.
While they're roasting, get your blender ready and add 5 tbsp. of minced garlic, 1 chipotle pepper in adobe sauce plus a few tbsp. of the adobe sauce and some red pepper flakes. The amount of flakes depends on how hot you want it. Having 1 chipotle pepper plus these other jalapeños is plenty hot in my opinion but you can add as much or little as you want.
Once the tomatoes and jalapeños are done and roasted you'll throw them in the blender with the other ingredients. Make it into a purée and BAM! There is your homemade hot sauce.
The only thing I did differently than what the kitchen does is I only used 4 tomatoes and they recommended 5. Plus, I used 4 fresh jalapeños and not the pickled ones that come in the jar. At the club they use those and add a bit of the vinegar used to preserve them to the sauce. Still tastes great!
